Yeast are killed by their own metabolic product: ethanol damages cell membranes and denatures proteins. Different strains have evolved different alcohol tolerances. When ethanol exceeds the strain's threshold, fermentation stalls with residual sugar remaining. This is why very strong beers and wines require specialized yeasts.
